The connoisseur class knows all too well that Las Vegas is a wonderland for anything and everything in the culinary realm. The citys top restaurants offer high-roller dining with gourmet foodie pleasures from around the world and that includes caviar.

The recent opening of the new Caviar Bar at Resorts World ushers in a new level of sturgeon roe indulgence. Heres where to get the best, most luscious presentations of prized pearls in Vegas.

Michelin-starred chef Shaun Hergatt has opened a jewel box restaurant and bar at Resorts World Las Vegas, offering indulgent plates of cured meats, oysters, crudos, cheeses and seafood dishes. But Hergatts selections of Kaluga, Golden Ossetra and Sevruga are the stars, served with traditional accompaniments ($275-$350). One of the citys favorite chefs returns with a sumptuous new restaurant in Virgin Hotels Las Vegas. The menu may pay homage to Old World Italian flavors but the experience at this Spiegelworld-produced experience at Cosmopolitan Las Vegas is decidedly new. The vintage supper club inside Wynn Las Vegas aims to take social dining to a new level (although the no photo policy is deliciously anti-social media). The legendary French chefs eponymous restaurant at Caesars Palace just introduced a new dish, Caviar and Langoustine: lobster-like prawn marinated in citrus, lemongrass and kafir leaf served with pickled mango, chutney, caviar and langoustine consomm with miso.
