Award-winning chef Todd Jurich teams up with EVMS to teach diabetes-friendly cooking

jurich-toddAward-winning chef, Todd Jurich of Todd Jurich's Bistro in downtown Norfolk has teamed up with Eastern Virginia Medical School's Strelitz Diabetes Center to teach people how to cook a healthy, tasty meal for loved ones living with diabetes.

Jurich opened his kitchen to WVEC 13 News (click photo to view the video) to demonstrate how to prepare an original meal — a pumpkin and crab soup followed by cauliflower couscous with smoked raisins and sundried cranberries served with pepper seared coho salmon.

"November is Diabetes Awareness Month, and diet is such an important part of preventing and managing diabetes," Mr. Jurich says. "Like many families, mine has been impacted by diabetes, and I wanted to find a way that I could help address this issue."

Mr. Jurich worked with Phyllis Woodson, MS, registered dietitian and certified diabetes educator at the center, to develop the meal as well as several diabetes-friendly items that will debut on the bistro's menu in November.
