Specialists with firearms and night vision will hunt foxes on Granite Island over the coming fortnight in an effort to save what is left of a once burgeoning little penguin population south of Adelaide.

A fox attack that killed up to nine penguins earlier this month has reduced the population to as few as 12 birds, with fears another attack could wipe out the population altogether.

A bait laid by the Department of Environment and Water (DEW) has since been taken by a predator, but sightings of a fox crossing the causeway has prompted further action including the island's closure at night on Monday to Thursdays.

"We'll have people over there with firearms looking for the foxes, so it's just a temporary closure while we make sure there are no foxes over there," DEW Conservation and Wildlife director Lisien Loan told ABC Radio Adelaide.

"Since the bait was taken we've seen no evidence of a fox but after this more recent sighting we are getting some of our specialist pest controllers down there who can use night vision and thermal imagery to double check there's none on the island.

"We've also installed an ultra-sonic fox deterrent on the causeway [to Victor Harbor], so that emits a high frequency that dogs and foxes do not like."

She said it had been 14 years since foxes were last on the island.

Ms Loan said the last official count of penguins in 2012 recorded 30 on the island, although it was reported last year that the population had increased to 44.

It is a dramatic reduction from more than 1,000 at the start of the century, a decline that has been attributed to a variety of causes, from seal and fox predation, to climate change, fishing and human interference.

Victor Harbor City Council Mayor Moira Jenkins said, between the department and volunteers counting the penguins, it was estimated there were between seven and 12 penguins left.

"We really want to be able to protect them," she said.

"It's just so sad."

She said several members of the public had reported seeing foxes on the causeway and the council was keen to work with the Government to erect a fox-proof gate.

Ms Loan said DEW was in talks with the Department of Infrastructure about installing a fox-proof fence with a "spring-loaded gate" on the causeway.

The State Government also has plans to demolish the heritage causeway altogether and replace it with a concrete and steel structure a proposal that has prompted a protest petition that has been signed by nearly 9,000 people.

Should you be in Serbia at Christmas, you may well see men running around their houses chanting (in Serbian) the equivalent of Do not listen, God, to Jack, who is full of cack (cack being excrement).

Christmas in Serbia is at a much more sensible time when the crops are gathered, the pantry is full and the weather more suitable for cosy socialising, and it is when they crack the first walnut of the harvest. The chant is done to thwart the bad omen of discovering a shrivelled kernel apparently an ominous sign that the forthcoming year will not be prosperous. Such is the importance of walnuts in Europe and what was once Persia, which is where our common, so-called English, walnut originated from.

As far back as the fourth century, Alexander the Great recognised the attributes of the nut of the god Jupiter (which is where the Latin name for the walnut family, Juglans, originates). Since then, hybridisation and selection evolved the trees that still dominate the forests of Kyrgyzstan into the trees with the larger fruit that we know today. They were traded on the Silk Road, the Romans distributed them throughout Europe, and the Reverend Paul Crath imported tonnes of seeds into America in the 1930s. English merchants took walnuts aboard ships and to the rest of the world, but they were never grown in England on any extensive scale.

In the 1980s, the New Zealand Tree Crops Association (NZTCA) set about to select varieties suitable for our climate. Members collected more than 800 walnuts from trees throughout the country, and selected nuts for quality (taste, colour), suitability for commercial production (size, shape, seal and storage) and crack-out (how full the shell is). The best were then grown at Lincoln University to determine yield, biennial bearing, form and flowering times.

This research has initiated a walnut industry based in Canterbury which produced more than 200 tonnes last year and expects to triple that when trees already planted mature.

The top performer of the Lincoln trial was cultivar number 152, henceforth called Rex, and it constitutes about three-quarters of the New Zealands commercial crop.

Rex is a lateral bearer yielding heavy crops from a young age, but its small nut requires a factory to process.

Growers who sell in-shell nuts directly to customers prefer the larger nuts of the terminal bearing varieties from which it is easier to extract whole or half kernels. (Some walnut varieties bear fruit only on a terminal shoot at the end of one-year-old wood. These are called terminal bearing varieties. Other varieties bear fruit on shoots sprouting from the full length of the one-year-old wood. These lateral bearing varieties lead to higher yields when the tree is young.)

North Island growers in particular favour the long nuts of Meyric, or the heavy crop of Shannon. Trials and research in different locations prove that seasonal influences are the biggest variable affecting nut production, and variety selection to suit regional climates is important.

Propagation & pollination

Because walnuts can cross-pollinate, a seedling-grown nut can be an unknown mix of both parents.

Seedlings are reputed to take a little longer to start bearing nuts, but several experienced growers refute this, saying tree care and variety selection have a bigger influence on bearing age. In general, seedlings tend to be more resistant to pests and disease, so they grow to become a healthier and more robust tree.

Since grafted cultivars can be expensive ($30$114) and of limited supply, it is certainly worthwhile finding a good walnut tree in your area and planting some nuts from it.

Plant the nut on its side, so when the embryo splits the shell, it does not fill and hold water.

Walnuts are self-fertile, but the chances of selffertilisation are not high. The overlap of pollen shedding and receptivity of the female flower is very short. However, walnut pollen can travel for many kilometres on the wind and even seemingly isolated trees usually get pollinated.

Climate too plays a part with warm weather inducing early pollen release and extending its viability. For maximum production, commercial growers plant two different varieties to cross pollinate one another.

Care & maintenance

Walnuts take seven to 15 years to get into production, and a tree needs about 10 square metres. If you have the space, a walnut tree provides a beautiful shade tree with very little maintenance. They dont usually have single leader and naturally form a lovely rounded shape. They dont usually need to be pruned either.

They will grow in most situations and soils doing better in sheltered fertile soils, of course but will not tolerate wet feet.

On planting, dig the hole at least a metre deep to ensure good drainage.

Boron is notably lacking from most New Zealand soils. Deficiencies can reduce a walnut crop by up to 300 per cent and cause new growth to snake head, growing up and over like the handle of a walking stick.

If there is any possibility your soil might have Phytophthora, then it is worth the trouble to get a grafted tree on Juglans nigra rootstock.

The most common issue is walnut blight a fungus that attacks the nuts and new growth, and thrives in warm wet spring weather. Some cultivars are naturally more resistant.

Planting where there is good airflow hampers fungal growth, as does copper spray at bud burst.

Once established, walnuts will bear nuts for some 120 years.

Just to be confusing, a walnut is not a nut. Like a peach, it is a drupe with flesh surrounding a kernel. This flesh, aka the husk, contains a strong brown pigment which can be made into a dye for fabric or hair, or an ink that artists such as Leonardo da Vinci and Rembrandt used.

The shells are great fire starters and are commercially crushed for use as an abrasive (the walnut equivalent of sand blasting) or added to facial scrubs as an exfoliator.

The foot of the trunk is sought after for gunstocks and even the leaves were used in a decoction for treating diabetes in traditional Austrian medicine.

All of the Juglans family produce juglone, a toxic substance that reputedly stunts the growth of neighbouring plants.

However, growers and orchardists in New Zealand have not seen any effect of this perhaps something in our soil counteracts this. Juglones is reputedly strongest in the black walnut (Juglans nigra), which though edible is small and hard to extract and usually only grown for its timber.

Juglone has been used as a herbicide and is also toxic to many insects and at least one farmer I know specifically plants them as shade trees for his cattle, observing that they deter the flies.

Somehow though, they have fallen out of fashion and less than 5 per cent of people surveyed now eat them regularly.

Part of this could be attributed to the lack of fresh, tasty nuts. Without the space or patience to grow our own, we buy old, shrivelled and imported nuts, store them until they are rancid, then throw them into a carrot cake or the bin.

New Zealand walnut growers are horrified by such practices. For those in the know, a fresh, well-harvested and stored walnut is a gourmet food. Its high oil content delivers plenty of health benefits, but these omega-3 and polyunsaturated fats go rancid with time and warm temperatures.

New Zealand nuts are harvested as soon as they fall, and are dried and sweetened with optimum air-flow and temperature. Our cultivars have been selected to produce a honey-coloured, sweet and tasty nut, which, though it will store in shell for about a year, is kept at premium if cracked and stored in an airtight container in the fridge or freezer until required.

The best are the small and sweet heart-shaped nuts of Juglans ailantifolia, the Japanese walnut, which is classified as invasive as it has overwhelmed many riparian zones in the North Island. Foraging the nuts will help prevent it spreading.

Another member of the family worth growing is the butternut (Juglans cinerea). It is a large tree producing football-shaped nuts which have a sweet, creamy flavour more like a pine nut than a walnut.

Most walnut orchards in New Zealand are certified organic. But walnuts are so easy to grow, even if not certified, it is unlikely the crop has needed a regimen of nasty chemicals.

The retailer will install Quadients CVP Everest at its centre in August.

CVP Everest is a high-speed fit-to-size packaging technology and will support The White Companys future e-commerce orders.

It will also allow the company to cut down on the environmental impact of its distribution centre and fulfilment and delivery operation.

RICHMOND, Ind. Reid HealthCommunity Benefit is awarding $150,378 in grants for 25 programs throughout Reid Health's service area.

Programs receiving the grants are designed to improve health by encouraging physical activity, good nutrition and healthy weight control, according to a release.

These grants are the second awards of two grant cycles for this year. A committee of Reid Health's governingboard and community members reviews requests for grants to promote health and wellness locally, and to target prioritized health needs in Reid's service area. "The grants are awarded as part of the health system's efforts as a mission-driven, not-for-profit organization," the release stated. "The work of Reid Health Community Benefit provides millions of dollars of support to our communities each year."

Grants awarded this cycle are:

"Community benefitis defined as programs or activities that improve access to health services, enhance public health, advance increased healthknowledge, and/or relieves the government burden to improve health. It is the basis of the tax-exempt status of not-for-profit hospitals, and ensures that tax-exempt hospitals are meeting the health needs of their communities while demonstrating transparency and accountability to those they serve," the release stated.

METRO DETROIT Seemingly endless weeks of hot, steamy weather along with a few intense storms have dramatically increased the use of air conditioning, and at times, cut power altogether this summer.

The COVID-19 pandemic has exacerbated both issues, with families staying at home more and the closure of many public buildings typically sought after for shade.

Consumers Energy and DTE encourage customers to shift energy use away from peak times, typically 2-7 p.m. weekdays in the summer, when demand rises and electricity is more expensive to provide.

According to DTE, the number of 90-degree days in Detroit is already three times higher this summer compared to last summer at this point.

Michigan residents should know they can take simple steps in their homes every day to reduce energy waste and lower their bills, Consumers Energy Vice President of Customer Experience Lauren Youngdahl Snyder said in a prepared statement.

Youngdahl Snyder recommended clearing leaves and debris away from central air conditioning units and compressors and replacing dusty filters, which make air conditioners work harder. Replacing or tuning up old air conditioners also will increase energy efficiency.

She said to seal and insulate homes, which keeps cool air inside in the summer, as well as keeping hot air inside during the winter.

She also recommended setting thermostats at 78 degrees while at home and higher when away. Automatic setback or programmable thermostats can start air conditioners shortly before returning home.

Operate appliances such as stoves, ovens, dishwashers and clothes dryers during morning or evening hours when its cooler outside, as they add extra heat to the home and make the air conditioner work harder, Youngdahl Snyder said.

Roger Morgenstern, the senior public information director for Consumers Energy, said residential energy use has increased, while commercial use has decreased. Many employees are working from home and families are staying in.

Our offices are closed at Consumers Energy, he said. Obviously, there are crews you see out there day and night taking proper COVID-19 safety measures, and the dispatchers. You cant pack up an 800 megahertz radio and take it home with you.

Using less energy also decreases the need for energy companies to build more power plants and reduces pollution, Morgenstern said.

Brynn Guster, a senior communication specialist at DTE Energy, recommended closing blinds and drapes during the day to keep out the heat from the sun. Window film and solar screens can also be used on west- and south-facing windows to block sunlight.

Guster also recommended ensuring that furniture is not covering registers, which blocks cold air from circulating into the home, and closing doors and windows to trap in cold air.

Other tips provided by DTE Energy include using microwaves or grilling outdoors, instead of using stoves or ovens, to avoid adding extra heat, or if cooking inside is necessary, turn on exhaust fans to move the hot air outside.

Taking quicker, cooler showers will also prevent bathrooms from filling up with hot, humid air; installing an attic fan can reduce the need for air conditioning; and using box, ceiling or hand-held fans can provide instant relief.

(Fans) create a cooling effect on skin because they move air around and cool your body. Its great for instant relief, and its not going to cause your energy to go through the roof, Guster said.

In case of power outages, fans are energy experts No. 1 recommendation.

Its important to stay out of the sun and hydrate, Morgenstern said.

Guster said to practice safety first by taking breaks and avoiding becoming overheated.

We definitely have seen the summer temperatures with 90-degree days. Its fun to feel in summer mode when youre next to a pool, but not everybody can do that. It becomes draining. You feel your body become lethargic, she said. Were all under some additional stress with COVID happening, and everyone at DTE takes it very seriously.

Royal Oak Assistant Fire Chief Jim Cook recommended installing smart thermometers, which can be controlled remotely; purchasing dry ice in case of extended power outages, which can keep frozen and refrigerated foods cold; and cooking outdoors.

You can also do some outdoor water stuff if you have kids. You can use the garden hose or sprinklers you dont need power for that, Cook said. When the pandemic started, you couldnt find kiddie pools in southeastern Michigan. They were completely sold out because everybody was snatching them up.

He said the Fire Department, to his knowledge, has so far only responded to one call of an overheated, elderly patient, who ultimately recovered, and its biggest issue has been responding to more than 100 calls for service for downed power lines due to recent storms.

Detectives investigating two burglaries in Chester are appealing for information from members of the public.

Two houses on Sealand Road were broken into whilst no-one was at home on Tuesday 21 July.

A quantity of cash and jewellery were stolen from both houses.

One of the victims saw a man coming out of his address when he returned home at around 3.40pm.

He attempted to pursue the man in his car but lost sight of him near The Mulberry Centre.

The man knew the victim was attempting to catch up with him and fled on a bicycle.

He is described as white, in his late 20s or early 30s and around 6 tall with a slim build.

The man had short, scruffy, black hair and a gaunt face and was wearing a grey hooded jacket.

The mountain bike he was riding had silver and green colours on it.

Enquiries in relation to the two burglaries, which detectives believe to be linked, are ongoing.

As part of their enquiries detectives are urging anyone with any information or footage that may aid their investigation into the incidents to get in touch.

Detective Constable Tom Philpotts, of Chester Local Policing Unit, said: Burglary is a serious offence in which victims are targeted in their own home, which is the place you should be able to feel most safe.

I would like to reassure members of the community that we are doing everything we can to establish who committed the two burglary offences on Sealand Road and bring them to justice.

They were committed at some point after 2pm on Tuesday 21 July.

Flintshire’s summer play schemes gear up for summer of fun but, of course things will be different this year. – Deeside.com

Flintshires summer play schemes are gearing up for another summer of fun albeit a little differently this year.

The schemes will be delivered by the Councils Play Development Team in partnership with local town and community councils, Urdd Gobaith Cymru, Flintshire Families Disability Service and Welsh Government.

Due to the current situation, the play schemes will run from Monday 17 to Friday 28 August (Monday to Friday). Pre-registration is essential for all site locations and there will be a maximum 28 children permitted per session.

All sessions are free of charge for children aged 5 to 12 years and all Covid-19 controls will be in place on site, including gel stations at entrance and exit points.

All games and activities will be organised with social distancing measures in place.

Full information and parent/carer consent forms are now available online on the Flintshire County Council website:Summer Play Schemes. Assistance in completing the forms is available.

Due to the ongoing situation, we are sadly unable to offer the Share your Lunch scheme this year.

The Flintshire Buddy scheme as in previous year will be an integral part of this provision providing 1- 1 support for children with disabilities.

Who is that man? Rare portrait by Hokusai emerges out of the blue : The Asahi Shimbun – Asahi Shimbun

OBUSE, Nagano Prefecture--An extremelyrarehand-drawn portrait likely by renownedukiyo-e woodblock artist Katsushika Hokusai that recently came to light has triggered a quest to identify the man in the picture.

Hokusai (1760-1849) is regarded as one of the greatest ukiyo-e artists of the late Edo Period (1603-1867).

A resident of Gunma Prefecture donated the portrait to the Hokusai Museum here at the end of last year.

Art historian Toshinobu Yasumura, who heads the museum, noted that the drawing carries the artists signature and seal and determined it was authentic, judging from the style, sharp outline and the way the man's limbs were depicted.

The portrait apparently was executed byHokusai in his early 40s, based on kanji characters that state it was done in1803 in the Japanese imperial era.

Only a few original portraits drawn by Hokusai survive today, according to Shugo Asano, who heads the Museum Yamato Bunkakan in Nara and is well-versed in ukiyo-e.

It is drawn in a straightforward manner, compared with other portraits (by Hokusai), said Asano, after viewing a photo of the image. Since it was drawn relatively early in his career, he had probably yet to establish his style. It is an interesting work.

Yasumura believes the man in the portrait is a money changer as he holds what appears to be an abacus in one hand. A scale and a book for keeping track of money are also depicted.

Sentences written on the upper part of the portrait say the mans family name is Kamiyama. But the name of his store and its location are unknown, Yasumura said.

The Hokusai Museum plans to put the portrait on public display at an exhibition scheduled to start from Sept. 5.

Howards makes great products for wood. No one will question that. And you dont have to be a pro to use them, they are the do-it-yourselfers friend.

So, when I was whining to them about NO HARDWARE SHOW in Las Vegas this year, they said they had a new product. Hungry for a new product I said to send me a sample. I am so glad I did, and I think you will too.

When you go to the Howards website you will see that they show Wax-It-All as a food grade wax. So, you assume its strictly for cutting boards, butcher block, wooden bowls and utensils. But you can use it on so much more like outdoor iron furniture. I have wrought iron chairs and table, and even when they are squeaky clean, it just looks dull.

So, I tried it on my metal furniture, and I was amazed. It left a soft sheen on the metal and the color had a new depth. It also felt soft to the touch if metal can feel that way. I waxed two of the four chairs, and I will take before and after pictures.

When I did the chairs, I really didnt read the directions, because I assumed you just apply and wipe off. Well, read the directions, and dont do as I did. You need to apply the wax, let it dry, and then polish off with a clean cloth. There is no telling how great they will look if I follow the directions.

Well after I did the chairs, I polished the metal frame on my sliding glass door, but you can use it on concrete, stainless steel, soapstone slate and laminate. For those of you that have granite composite sinks, I think you have found an answer to the dull look of your sink.

Question: Hope you can help me or direct me to a great source. We have just re-decked our patio and it looks great. We stained with water seal and all went well. About 3-4 days later, there was one board slat and another very small area where tree sap is soaking through. I initially tried sanding and sap stuck to the sandpaper. Duh! I have left it to dry for about two weeks, but the sap is still coming through on the board, sticky. Can you help with a recommendation product or a procedure? Just love your article in our weekly community paper. Keep up your suggestions. I am ALWAYS reading and listening.

Answer: Some wood is just like that, but you can clean it off with mineral spirits or paint thinner. Just remember to work toward the center of the stain and dont spread the sap. I have to warn you, it may come back, and then you will need to clean it again.

Question: A while back you had an article about cleaning/restoring fence surfaces with some sort of mist or spray. We have a cedar fence that has weathered over the years and we'd like to restore it as much as possible.

Answer: Oh wow, we just talked about that product yesterday on the radio show. Its called Miracle Mist. Spray it on the fencing and just watch it work. I have never seen anything like it. Its so much better for the fence than power washing.

Question: I left a return Christmas tree box in the backseat of my convertible and discovered a mold formed around the seat belt and on the leather seats. Doesnt help that I let the 3 yr. old grandson eat in the car either. I have tried vinegar, leaving the top down to get sun on it and leather cleaner. Any ideas?

Answer: For the belt, use Moldex Mold Remover. Its a bleach-free formula that should not remove any color or leave any residual odor. For the leather, I would use Leather Only. It would be the only safe answer. Good question!

Police and RSPCA to take action over attacks on Sammy the seal – Dorset Echo

POLICE and RSPCA officers are drawing up a plan to protect Weymouth's resident seal from attack.

The seal, nicknamed Sammy by locals, has been spotted on the beach regularly over the past two months.

However, there has been an increasing number of reports of people throwing stones at Sammy and videoing others doing so.

A spokesman for Weymouth and Portland Police said: "Officers met with the RSPCA to discuss the seal that is residing in the Weymouth area.

"All agencies involved will be working together to maintain the safety of the seal and that of the public using the beach where the seal is present.

"Please take care when swimming in the area and do not encourage contact with the seal.

"Please maintain a safe distance at all times to protect yourself and the seal.

They were forced to take action after repeated reports of youngsters throwing stones at 'Sammy'.

As previously reported Andy Tolley, an engineer, was walking along Bowleaze Cove when he saw two parents with their two children.

The children were throwing rocks at Sammy whilst the parents recorded them doing so on their phones.

Andy, 63, said: I was just walking with my friend and we could see the family and they were looking at something.

Then all of a sudden I could see it was a seal trying to come onto the beach and the kids were throwing rocks at it while the parents filmed it.

The kids were only about 10 feet away from the seal and they could have been doing some real damage to it at that close range.

The seal was trying to get onto the beach and, because of the kids throwing stones, it kept going back into the water, swimming further up and then trying to come in again. Eventually it disappeared as it couldnt get safely onto the beach.

I was stuck for words. I couldnt believe what I was seeing. There were other people on the beach watching them as well and I dont think they could believe it either.

I wish I had gone up to them and taken photos of what they were doing so that the pictures could be used to demonstrate what others shouldnt be doing. I was just gobsmacked.

This is not the first report of stones being thrown at seals on the beach as members of the public have been getting increasingly closer to the wild animals. A child was bitten last month after trying to stroke Sammy. A dog also attacked the seal.

HCSO develops new tools to fight the opioid crisis during the COVID pandemic – KARE11.com

The Hennepin County Sheriff's Office is now offering drug disposal bags and naloxone training.

MINNEAPOLIS While the coronavirus pandemic has dominated headlines in recent months, that doesn't mean other areas of community concern have suddenly vanished.

According to the Hennepin County Sheriff's Office (HCSO), there have been several spikes in opioid overdoses over the past four months, including at least 50 fatal cases.

"We arent hearing about these incidents as often but they are happening," Sheriff David Hutchinson said.

Officials with the sheriff's office say COVID-19 has created unique challenges around the opioid addiction crisis. For instance, social distancing measures have changed the ways deputies can help people prevent or survive an overdose.

Sheriff Hutchinson and his department have developed two new strategies to combat the opioid crisis during the pandemic.

One new effort involves mailing Deterra drug disposal bags to people in Hennepin County who want a safe way to dispose of unwanted or expired medications.

"Deterra drug disposal bags offer a simple, safe way to dispose of medications at home," Hutchinson said. "People place their unwanted medication in the bag, add water, seal, and shake. The entire bag can be disposed of in household trash."

The sheriff's office is also offering online training courses to help people learn how to properly administer naloxone to someone experiencing an overdose. Also known by its brand name Narcan, naloxone is often considered the opioid overdose antidote for its ability to reverse the effects of an overdose.

The average cost to add a wooden deck onto a home is $14,360, according to Remodeling Magazine's most recent Cost vs. Value Report. By comparison, the average composite deck costs $19,856. As such, there's a lot of upfront savings to be reaped when you choose wood over composite.

But that's not all. From a return on investment perspective, wood is also a better choice. The average homeowner or house-flipper who installs a wooden deck will recoup $10,355, or 72.1% of that project's initial cost. By contrast, with composite decking, the average amount recouped is $13,257, representing a cost recovery of 66.8%. As such, if your primary goal in installing a deck is to add to your home's resale value and recoup the largest chunk of your investment, then wood may be the smarter choice.

From an investment perspective, it's clear that wood decking over composite is a good bet. But what if you're not flipping or selling a house? What if you're installing a deck for your own enjoyment? In that case, it could actually pay to choose composite.

Wood decking requires a lot of ongoing maintenance. You need to seal and sand it every year and paint or stain it every other year. You'll also need to pressure-wash your deck every year, and sometimes more frequently than that. If you don't maintain your wooden deck properly, it can warp, splinter, and even rot through completely, resulting in a major hazard.

Composite decking, on the other hand, requires very little maintenance. You may need to pressure-wash it every year, but that's really about it. In fact, over time, you're apt to spend a lot less money maintaining a composite deck than a wooden deck. If you're adding a deck and selling your property shortly after the fact, that's not a concern, as you won't be the one stuck with that maintenance. But if you're planning to stay in your home for a long time, then you may be better off spending more on composite and saving yourself the money and hassle over time.

Of course, if you happen to prefer the look of wood, then you might opt for it anyway in spite of that maintenance. Aesthetics should play a role in your decision, too.

Ultimately, any type of deck is a good addition to your home. It can help you better enjoy your outdoor space and add to your property's resale value. While wood decking may offer a better return on investment, if that's not your primary concern, then composite may be a more suitable choice.

THE WASHINGTON POST Mexican cuisine, said Eddie Garza, doesnt have to be all about cheese, meat and lard. In his 2016 cookbook, Salud!, he points to pre-Hispanic Mesoamericas big focus on fruits, vegetables, legumes and grains. As his grandmother told him, Before the Spanish came to Mexico, food was provided by the Sun and Earth.

The son of Mexican immigrants who grew up in a border town at the southern tip of Texas, Garza now works for the Humane Society of the United States, where he helps reform food systems in Latinx communities and trains cooks in the joys of plant-based recipes. I first started cooking from Garzas book because his adaptations of traditional dishes are rooted in a deep understanding of Mexican cooking instilled by his abuelita. And the results have never disappointed me.

Theyre not all pre-Hispanic, either. My latest obsession is his Tofu Steak Veracruzana, seared cutlets smothered in a classic Veracruz-style salsa that includes bell peppers, tomato, olives, capers and white wine. Those capers and olives, he writes, represent some of the European ingredients that came to characterise the coastal states cooking, along with tropical fruit and, of course, seafood.

Tofu, famous for its mildness, works well with the salsas tart, salty, slightly spicy punch.

But Garza adds flavour wherever he can, so before you sear it and sauce it, you treat the tofu to a lime-heavy marinade. Theres nothing fishy about that.

TOFU STEAK VERACRUZANA

Active: 30 minutes | Total: one hour

Four servings

Seared tofu cutlets get a classic coastal Mexican treatment usually reserved for seafood. Serve with rice and/or a green salad, if youd like.

INGREDIENTS

One package water-packed extra-firm tofu, drained

Two garlic cloves, finely chopped, divided

1/4 cup homemade or low-sodium store-bought vegetable broth

1/4 cup fresh lime juice

One teaspoon dried Mexican oregano

1/2 teaspoon kosher salt, plus more to taste

1/2 teaspoon freshly ground black pepper, plus more to taste

One tablespoon vegetable oil

One medium red onion, thinly sliced

One medium red bell pepper, stemmed, seeded and thinly sliced

One jalapeo chile pepper, stemmed, seeded and thinly sliced

1/2 cup pitted green olives, chopped

1/4 cup capers, drained, rinsed and chopped

Three large plum tomatoes, seeded and thinly sliced

One tablespoon vegan butter, such as Miyokos or Earth Balance

STEPS

Wrap the tofu in paper towels or a clean dish towel and microwave on high for one minute.

Unwrap, rewrap with fresh towels, and repeat. (This gets rid of excess liquid and is faster than pressing the tofu.)

Unwrap, let cool, and cut into four planks.

Combine the tofu, half the garlic, the stock, lime juice, oregano, salt and pepper in a large bowl or zip-top bag.

Cover or seal and marinate at room temperature for 30 minutes to one hour, turning occasionally. (If desired, you can marinate the tofu in the refrigerator for up to 24 hours.) Drain the tofu and reserve the marinade for another use.

In a cast-iron skillet over medium-high heat, heat the oil until shimmering. Add the drained tofu and sear it without disturbing until well browned, four to six minutes.

Turn each piece over, and sear on the other side until browned, about four minutes. Transfer to a plate.

Add the onion, bell pepper and jalapeo to the skillet and cook, stirring, until they start to soften, about four minutes.

Stir in the olives, capers and the remaining garlic and cook, stirring, until all the vegetables are tender, about three minutes.

Add the tomatoes. Reduce the heat to medium, return the tofu to the skillet, and cook until the sauce reduces slightly and the tofu is heated through, about five minutes.

Stir in the butter, then taste and season with additional salt and pepper, if desired.

To serve, either leave the tofu planks whole or slice them on the bias, and spoon over the sauce and vegetables. Serve hot.

July 15 was our 27th anniversary. Lots of memories throughout the years since Joe and I were married.

This is what my mother wrote in her column in July 1993 about our wedding. Mother wrote:

The weather was ideal for the wedding of daughter Lovina to Joe Eicher. Lots of work at such a time.

The Tuesday before the wedding, which was Thursday, July 15, about two dozen women came to help. They baked 90 pies (oatmeal, cherry, raisin, and rhubarb) and made 14 batches of nothings. Didnt really want that many pies, but that number came upon us before we knew or thought of it. Well anyways no worry to run out of pies.

Wednesday about a dozen girls came to peel potatoes, cut up vegetables for the dressing and make potato salad for which I had cooked a twenty-quart cooker full of potatoes. Also, the tables were set and the last minute cleaning done. Our wash house or shed saw lots of life out there, as all the work was done in there to prepare for the wedding ceremony. Wednesday evening quite a few of our friends came to see the wedding tables, and refreshments were served to the ones that came. It was an enjoyable evening.

Then came the wedding day. We started to fry chicken (300 pounds) at 4:15 a.m. which was served for dinner. Had enough for supper too and also served boneless ham. Our meals consisted of chicken and noodles, gravy, mashed potatoes, dressing, chicken, buttered corn, green beans (which came out of our garden), pork and beans, potato salad, carrot salad, lettuce salad (plenty from the garden), hot peppers, Swiss cheese, fruit salad, tapioca pudding, pies, cakes, nothings, celery sticks, coffee, bread, rhubarb jam, and butter. There were around 18 skillets used to fry the chicken. We cooked 3 twenty-quart cookers of potatoes for dinner for mashed potatoes and 2 twenty-quart cookers for chicken and noodles. In the afternoon we again cooked over 3 twenty-quart cookers of potatoes to be mashed and more chicken and noodles for supper. Also 16 quarts of gravy. There were 28 women to prepare the meals. We could seat 98 people in the house and 70 in the wash house. The tool shed was cleaned out where the wedding services were held and later used to set up a table for the children for the noon and evening meals. We had quite a crowd here for both meals. Well enough of this for now. What a relief to have it over with.

I have so many precious memories of mother and how much she did for her family. Joe was called back in to work this week after being laid off since March 23. It sure is a relief to us to have his income coming in again.

Yesterday, son Benjamin turned 21, so he wanted the family to come home for supper. He ordered out pizza and wings for all of us. What a treat is was! Chips, cheese ball and crackers, and ice cream were also added to the menu. I didnt get time to make a cake and didnt for daughter Lorettas birthday either. With son Josephs birthday coming up next week, it looks like we will have one cake for all the July birthdays. Its almost too much cake for one month if we have three. Benjamin said he wouldnt eat cake anyway, so he didnt care that there wasnt a cake.

Since I am running out of space, I will write about our family gathering at sister Leah and Pauls house next week. I will share the recipe for Mothers raisin pie. God bless!

2 (8-inch) unbaked pie crusts

1 C. raisins

2 T. clear gelatin

pinch of salt

1 C. sugar

1 T. apple cider vinegar

1 C. water

Preheat the oven to 400 degrees. Use one crust to line an 8-inch pie pan. Cook the raisins with water to cover in a kettle over medium heat until plump and juicy, about 15 to 30 minutes. In a bowl, make a thickening with the gelatin, salt, sugar, vinegar, and water. Pour into the raisin mixture. Cook until the mixture is thick enough to stick to a spoon. Add more sugar if it is not sweet enough for you. Pour into the pie shell. Cover the top with the remaining pie crust and seal and flute the edges. Cut slits in the center for steam to escape. Bake for 30 minutes, until the top is golden brown. Makes 1 (8-inch) pie.
