Roanoke County Schools leading the way in school nutrition

ROANOKE COUNTY, VA --

Kat Stackpole, Nutrition Manager at Bonsack Elementary likes to make eating healthy fun for kids and over the years a lot has changed in all of our local school systems including here in Roanoke County.

Years ago Roanoke County started taking fryers out of the kitchens in elementary and middle schools and just last year they removed the last of fryers in high schools now everything is baked only.

New this school year there is a push for better overall nutrition:

* Whole wheat rolls are one ounce

* Lower fat and lower sodium versions

* 2 fruits or vegetables instead of just one

Kathy hopes the younger kids develop lifelong healthy eating habits, "Hopefully they walk away here by the 5th grade knowing what to choose before they get to high school and are tempted by the other things."

While still keeping some healthy versions of comfort foods on the menu.

Kat says, "Our chicken nuggets today are skinless chicken nuggets and have a hint of BBQ flavor and the kids just love it."

5 Food Trends to Watch

I just got back from the Academy of Nutrition and Dietetics' Food & Nutrition Conference & Expo, the world's largest annual meeting of food and nutrition professionals. Registered dietitians (RDs), like myself, from all over the country (and even overseas) attend for up to four days of cutting-edge nutrition science research, educational presentations, lectures, debates, panel discussions, and culinary demonstrations.

My original plan was to write about my Expo discoveries, figuring I would find lots of new and exciting products to write about among the more than 350 food- and nutrition-related exhibitors. For many hours, I scoured the Expo floors looking for something new to jump out, until it hit me. I wasn't really going to find anything new, at least not new to me. As an RD who works with the media, I am always getting new research and information on products--long before those products hit supermarket shelves.

So, I decided instead to write about the food trends I observed. Here are four that I would like to see stick around, and a fifth that I'd like to see clarified:

1. Individual Serving Sizes

As the waistlines of Americans continue to expand, companies are manufacturing products that can be sold in individual serving sizes. Personally, I love this. My patients are taught to read nutrition facts labels, paying special attention to serving sizes. But the majority still have difficulty portioning out something that they are enjoying. However, a "100 calorie pack" of cookies with no nutritional benefit will never be as exciting to me as a "single serving" package of cheese, chocolate milk, or nuts.

2. Low Sodium

Ever since the government's 2010 Dietary Guidelines for Americans recommended 1,500 milligrams of sodium as the daily cap for African-Americans, adults older than 51, and for individuals with high blood pressure or type 2 diabetes, companies have been trying to lower the sodium in their products. I don't really see a downside to this effort, since most companies were probably using more than they needed to begin with.

3. Less Added Sugar

I'm happy to report that this trend is still going strong. However, as I always point out to my patients, there's a difference between added sugar and naturally occurring sugar, such as sugar from fruit or dairy products. That's why it's important to read the ingredients listed on the label to see where the sugar is coming from. I was pleasantly surprised to see that a new dried cranberry product is being introduced, with 50 percent less added sugar than its original variety. I am typically a much bigger fan of fresh versus dried fruits, because of the high sugar content, but now I may be able to go both ways.

4. Whole Grains

Media Asked To Increase Reportage On Nutrition Issues.

Health News of Friday, 12 October 2012

Source: Mathias Aboba-Tamale

Ghanaian Journalists have been encouraged to use the powerful tool of the media to bring into the spotlight issues of nutrition for public attention and discussion so as to increase awareness of the impact of under nutrition among the population as a way to help generate solutions for optimal nutrition for increased productivity and national development. The called was made by the Mrs Wilhelmina Okawbi, Deputy Director in charge of nutrition, Ghana Health Services. Mrs Okwabi made the appeal during a days seminar on nutrition advocacy and reporting organized by the Ghana Health Service in collaboration with USAID for Journalists in the three regions of the north in Tamale. Presenting the 2011 Ghana nutrition profiles results Mrs Okwabi, pointed out that the major nutrition challenges in the country are; stunting (too short for age), wasting (low weight for height), anaemia (iron deficiency) and iodine deficiency. She mentioned some of the dire consequences of under nutrition to include: low productivity in adults, growth and learning impairment in children, reproduction challenges in women and mortality in all populations. Mrs Okwabi revealed that every in Ghana some 12,000 children die because their weight is too low for their age (underweight). According to her the survey has also shown that anaemia is very high in Ghana accounting for 20% of maternal mortality in the country. In her view, Ghana stands to gain tremendously if the nation is able to increase nutrition security to the population particularly women and young children. The nutrition profiles results for 2011 reveals that if Ghana is able to reduce stunting alone economic gains accruing to the country could exceed 720 million cedis (US$504 million) by 2020. The Northern Regional Director of Health Service Dr Akwesi Twumasi in his address to the participants said if Ghana does not place nutrition high on the national development agenda there is no way the country can achieve the Millennium Development Goals (MDGs); if at all we make some gains such gains are not sustainable and soon erode. Dr Twumasi charged journalist and health workers to be champions of nutrition to support change. On the role of the media in promoting nutrition, Esi Amoaful, Deputy Chief Nutrition Officer, Ghana Health Service, said the media as a powerful education tool can be used to sensitize the public about the importance of good sanitation and proper nutrition. She disclosed that one of the biggest nutrition challenges facing Ghanaians is the poor handling of food. Mrs Amoaful urged the media to take on the issue of people preparing and selling food and fresh meat to the public under insanitary conditions stressing no food is nutritious after it has been contaminated. Equally the media can play a key role in helping to change poor eating habits such as the eating of solely grains, fatty, and sugary foods while encouraging variety and balance diets and consumption of local foods. The one day seminar drew Journalists from the Northern, Upper East and Upper West Regions to deliberate on ways of making nutrition a priority on the development agenda. It was under the theme: Build the future. Invest in nutrition now.

Dietitian Wins Nutrition Award to Become Breast Feeding Expert

A dietitian from North Shore Hospital has won a prestigious nutrition award to support her career ambition to be the first New Zealand dietitian specialising in breast feeding.

Sarah-Jane Westbrooke became a New Zealand Registered Dietitian in 2009 and currently works as a Paediatric Dietitian at North Shore Hospital, where her main professional interest area is neonatal and infant nutrition. She will use the New Zealand Nutrition Foundation and Kellogg New Zealand 2012 Nutritionist Development Award for the training needed to become a New Zealand dietitian with specialist knowledge in breastfeeding. In the longer term Sarah-Jane aims to become the first New Zealand Registered Dietitian and Lactation Consultant.

A Rotary Group Study Exchange to Alaska/Yukon earlier this year fuelled her ambition. Sarah-Jane saw dietitians there working closely with the maternity and child health sector to promote optimum nutrition from pre-conception, through pregnancy, breastfeeding and childhood. I came back inspired, Sarah-Jane says. I saw how dietitians with specialist knowledge in lactation can improve the health services provided to mothers and babies. I want to do the same in New Zealand.

Sue Pollard, CEO of the New Zealand Nutrition Foundation, says the Foundation is pleased to be able to give the award this year in line with the New Zealand Health Workforce Strategy of improving the efficacy and efficiency of health services provided to mothers and babies in New Zealand. This is an investment in the future health of our population, she says.

Julian Ng, Marketing Manager, Kellogg New Zealand says this award helps to recognise and support the outstanding local talent starting out on their career in nutrition. Sarah-Jane is clearly a highly talented and dedicated dietitian. Kelloggs is delighted to be supporting her proposed learning and innovative approaches in the field of nutrition to help further impact the well-being of New Zealanders, says Ng.

Kelloggs has been a long term supporter of the Nutritionist Development Award, which was first established in 1995 to promote professional development for those in New Zealand working in the field of nutrition.

Sports nutrition experts point way toward provable benefits

The marriage of science and ethical, focused marketing can lead the sports nutrition market out of the dark shadows cast by spooky pre-workout products whose labels feature laundry lists of ingredients supposedly derived from rarely-mentioned botanicals, experts say.

In recent discussions with NutraIngredients-USA, formulation experts in the sports nutrition sphere said a new center of the market is forming, and its coming together around a commitment to safety and to demonstrable benefits.

Start with the research. Im an evidence-based practitioner. There has got to be some evidence. The idea that twelve athletes have used this and it makes them feel great may be a great place to start. But it isnt any way to start a business and develop a product and tell people that it works, said Susan Kleiner, PhD, an author and consultant within the sports nutrition sphere. Kleiner consults with multi-level marketing firm USANA on its sports nutrition lines.

I think that its kind of a two way street. I think that the public expects honesty from manufacturers. But it requires that the manufacturers also lead and do the research to show that there is actually some evidence behind their products, she said.

Recent launches typify trend

Two recent entrants in the sports nutrition sphere typify this trend toward the middle. In mid-September, Idaho-based Thorne Research announced a new line of sports nutrition products , followed a week or so later by the launch announcement of Klean Athlete, a line of sports products from Douglas Labs . Not coincidentally, both of these manufacturers have long histories in the health practitioner side of the dietary supplement business.

We wanted to create a line of products that are not so much operating at the fringe of sports nutrition, Tim Monk, senior vice president of marketing for Douglas told NutraIngredients-USA.

We wanted the parents to feel good that if their son comes home from football practice and has a can of the Klean isolate that they are taking whey protein and there is nothing else in that product.

Real world science

In addition to a commitment to purity and safety, Kleiner said, manufacturers need to cleave to science that drives toward real world benefits, rather that seeking to clear statistical significance hurdles that are too arcane for the middle-of-the-market consumer to care about. Kleiner said having experts with real world experience on board can help manufacturers achieve this goal.

Health and nutrition begins with family

Last week the University of Idaho's Women's Center sponsored Gloria Steinem to speak at the Women's Leadership Conference. Over the last 40 years, Ms. Steinem has played a pivotal role in the women's equality movement and is the co-founder of Ms. Magazine. In 1995 she was listed as one of the 25 most influential women in America. My dream of meeting this woman was far surpassed when my colleagues and I actually got the chance to chat with her about her take on the decreased health status of our children and families in the United States, specifically obesity rates.

What were her jewels of wisdom? She brashly asserted that Family and Consumer Sciences was the most important school on campus because of the significance it plays in the threads of family. What goes on in the family is the most important factor in raising healthy children; healthy children are the fabric of the future. In her studies of other cultures Ms. Steinem believes that the home is where it begins - food, love, communication, etc. This is where modeling healthy behaviors also starts. In cultures where men and women are both involved in raising the children (partnership cultures) children flourish. Equality equals harmony and health.

If we transfer this philosophy to the obesity issue, then teaching children to lead a healthy, active lifestyle begins in the home. While we can teach health and nutrition in school, it is most powerful to teach and practice good nutrition and physical activity in the home - by both parents. When I naively suggested that more women in the work force means more reliance on fast, processed, less healthy foods, Ms. Steinem quickly reminded me that women making healthy dinners for their family was only half of the equation. Men were equally responsible. When I ignorantly suggested that men "can't cook," she again reminded me that in the '50s men "couldn't type." But with the computer revolution of the '80s they quickly learned how to. Anyone can learn anything if the motivation is there.

So what is the take home message here? We gift each other with the power to choose and make choices. We as a culture need to choose to turn around the obesity epidemic by having a unified force. That unified force starts in the home with parents teaching, modeling and practicing healthy eating for their children. Filling your plate with 1/2 fruits and vegetables, a forth starches/grains and a forth protein/meat, with dairy as a chaser is a great beginning. When children ask for snacks offer fruits and vegetables. I remember when I was young and my family would sit around watching TV, my dad would bring out apples. He would meticulously peal the apple in circles with a paring knife and give each of his four children a "peel." Then he would slice it and give us each a sixth. Then he would start all over again on the next apple. I am not particularly fond of apples, but I loved this ritual and any food experience that involved my dad. The moral of the story is getting right back to the wisdom of Gloria Steinem - the family dynamic is the backbone of the health and nutritional status of our children... and the future.

Dr. SeAnne Safaii, Ph.D., RD, LD, is an assistant professor at the University of Idaho.

Capitol Alert: Nutrition group says Prop. 37 foes are mischaracterizing its position

A national group of nutritionists says its position on the safety of genetically-engineered foods has been misrepresented by opponents of Proposition 37 in the California voter guide.

"We are concerned that California's voters are being misled to believe the nation's largest organization of food and nutrition professionals is against Proposition 37, when in fact, the Academy does not have a position on the issue," said a statement from Ethan A. Bergman, president of the Academy of Nutrition and Dietetics.

The organization is mentioned in the "Arguments Against Proposition 37" section of the voter guide published by the Secretary of State, which says, "Respected scientific and medical organizations have concluded that biotech foods are safe, including... (the) Academy of Nutrition and Dietetics."

Opponents of Proposition 37 said they based the statement on a 2006 report by the organization, which was previously known as the American Dietetic Association, and didn't double check to see if it was still valid.

"ADA's official position was in strong support of GE technology and safety and, unfortunately, the version we saw was not clear that position expired in 2010, though that's obviously the case," Kathy Fairbanks, spokeswoman for the No on Proposition 37 campaign, said in a statement. "We apologize for the error."

Supporters of the measure had weeks to verify claims being made by the other side before the voter handbook was printed, but apparently didn't make an effort to do so.

"We were nave to think they would tell the truth about an endorsement they had so we didn't think to check it out," said Stacy Malkan, a spokeswoman for the Yes on Proposition 37 campaign.

Proposition 37 requires new labels on foods containing genetically-engineered ingredients, also known as genetically-modified organisms or GMOs. It is being supported by organic food producers and alternative health web site Mercola.com. Opponents include companies that make genetically-modified seeds and major snack and soda manufacturers that use such crops in their recipes. About 90 percent of corn and soy grown in the US is genetically engineered. It makes its way into many packaged foods in the form of corn syrup, corn meal, soy sauce and soy lecithin.

The Academy of Nutrition and Dietetics does not have a position on labeling genetically-engineered foods, and plans to release a new position paper on the safety of such food next year.

Eating Out: Conference offers nutrition experts a full plate of new ideas

Nobodys perfect, and thats especially true when it comes to eating a healthy, well-balanced diet.

All these years and we still know that balance, variety and moderation are the keys to good nutrition, and that includes enjoying occasional splurges, said dietitian Jill Melton, editor of Relish Magazine.

Melton and more than 8,000 other nutrition experts gathered at the Academy of Nutrition and Dietetics 2012 Food & Nutrition Conference in Philadelphia to learn the latest research and sample the best new healthy food products.

Heres a taste of what they learned:

Whats on your plate?

The U.S. Department of Agricultures nutrition icon, MyPlate, which has replaced the food pyramid, is receiving rave reviews from dietitians.

Its an easy visual. People easily see that half their plate should be fruits and vegetables whether theyre eating at home or at a restaurant, said dietitian Roberta Duyff, the author of The Complete Food and Nutrition Guide.

Dr. Robert Post, deputy director of the USDAs Center for Nutrition Policy and Promotion, said MyPlates meal planning tool called SuperTracker will soon allow users to include their favorite foods to calculations.

If you have your own version of a turkey avocado sandwich, Post said, you can create it with SuperTracker and save it in your profile.

Geronimo nutrition site in jeopardy

GERONIMO, Okla_Like many other senior citizen nutrition sites in Southwest Oklahoma, the center in Geronimo is in danger of closing down.

The Delta Nutrition Program, which oversees Geronimo's site, announced last month that their center and several others were in danger of closing because of federal budget cuts. Geronimo's center sees about 18 seniors per day, which is not enough to keep it open. But some of the center's employees and the seniors who visit say they're still fighting for it.

Geronimo's nutrition center has been feeding local seniors since 1988. It's managed to stay open from grants and a $2 daily admission fee for visiting seniors. That $2 is all most of them can afford. The center just received a $3,800 ASCOG grant for the 2012-2013 fiscal year but center officials say they're worried that it may be their last.

Dorothy McNabb has been coming to Geronimo's nutrition center for the past two years. She said the women have become a part of her family. So when she heard that a place she calls her second home may close, she was worried.

"I was so upset, I just can't imagine us not having a place to go everyday. We would miss so much. The whole community, they were very saddened."

She said the center offers seniors a way to stay active and socialize. Not to mention, gain access to nutritious foods.

"It is not like I cook at home. Where, we would just have leftovers and leftovers of the same thing. You get a variety of food each day."

Site manager Joanie Sutton said the reason this center is on the chopping block is because not enough seniors are coming in each day. At least, not when compared to larger cities like Lawton but she said those figures are skewed.

"We are a smaller community. So my numbers are going to be low. Some of them still work over 60, so they can't make it up here from 8 to 1."

Sutton said that in the last year, at least five more seniors have been coming in per day. Time will tell if that increase will be enough to stay open. But for the Geronimo community, this center means everything.
