Federal nutrition changes nibble at region's school lunch programs

While other areas are suffering school-lunch revenue losses due to new federal nutrition guidelines put in place at the beginning of this school year, local districts seem to be reporting only small decreases in lunch participation rates.

Jill Lucius, nutrition-services director for Sodexo-managed Fitchburg schools cafeterias, said Friday the district is experiencing about a 4 percent decline in lunch participation from last year.

In October 2011, 82 percent of the district's students bought lunch, while in October 2012, 78 percent did, she said. In February 2012, there was 81 percent participation, while this past February saw 77 percent, Lucius said.

These numbers, however, are skewed a bit by the district's high free- and reduced-lunch rate. This school year, about 71 percent of Fitchburg students qualified for free lunch, while 6 percent qualified for reduced lunch, according to the state Department of Elementary and Secondary Education.

When it comes to the remaining 23 percent that pay full price, however, that is where the district is seeing the sharpest decline in lunch participation.

"It's so obvious when you look at the numbers, that the paid category is where we're having a problem," Lucius said.

In October 2011, 60 percent of these students bought lunches, compared to only 43 percent in October 2012, she said. In February 2012, 56 percent bought lunch compared to 42 percent this past February, Lucius said. While there has been

Lucius believes Fitchburg is experiencing a smaller decline than other districts due to early implementation of the guidelines set forth by the Healthy, Hunger-Free Kids Act of 2010. Students are, for the most part, well-accustomed to the healthier food, she said.

How often do you head out for your training run first thing in the morningbefore breakfast? Should you avoid eating before exercise if you are trying to lose weight? Does eating before exercise leave you feeling shaky, or with an upset stomach? While the pre-event meal is a key element to performance, fueling muscles and being well hydrated before exercise sessions will give Marc, Lauren and Anne the edge to train hard throughout the weeks leading up to Bayshore. Experimenting with food and drinks during training will also help them determine the best timing and tolerance for pre-exercise and pre-race foods.

Goals of nutrition before exercise include:

Fueling your brain, as well as your muscles, gives you mental stamina and focus to optimize training. While your body uses a greater share of fat for fuel while exercising in a fasted state (8 hours since your last meal) compared to doing the same workout after a carb-rich meal or snack, studies show that people are able to exercise harder and for a longer period when they consume carbs before exercise; training without pre-exercise fuel leads to decreased performance and early fatigue.

Overall, being able to exercise longer, at a higher intensity, will result in greater energy use (more calories burned), which is needed to cause fat loss. Consider the goals of your session to decide whether to eat or not before exercise. If your primary goal is to improve performance, have something to eat before exercise. If your primary goal is weight loss, as long as you will do the same amount of exercise (burn the same amount of calories, but over a longer time/distance), it is ok save your meal until after the session.

When to eat

Food eaten before exercise is only useful once it has been digested and absorbed. What and how much you eat affect how quickly you digest and absorb food. This means you need to time your meals and snacks so that the fuel is available during your exercise session. A general guide is to have a meal about 3-4 hours before exercise or a lighter snack about 1-2 hours before exercise. That said, its not always practical to eat a meal 3-4 hours before exercise. If any of the Three Amigos train early in the morning, they should choose a light snack about an hour before, even if it means getting up just a little earlier. For example, a glass of milk or juice and then some fruit or a cereal bar on the way to training can top off fuel stores. If scheduled for their long training run, Marc and Lauren can make up for their smaller carbohydrate intake prior to exercise by drinking a sports beverage during the event or training session.

Most of us don't give much thought to kidney stones -- until we, or a loved one, suffer from one. But the truth is, kidney stones are on the minds of more people today than in the past. They affect about one in 11 Americans -- a marked increase over the one in 20 in 1994.

Researchers recently analyzed data from the National Health and Nutrition Examination Survey (NHANES) and found the highest incidence of stones to be among white males. Among adults ages 60 and over, 20 percent of men and 10 percent of women had a history of kidney stones. The findings were published in the journal European Urology last July. The same study suggests that much of the blame for the increase should be placed on the rise in obesity. Researchers also found an association between kidney stone risk and diabetes and gout. Traditional risk factors for kidney stones include inadequate fluid intake, which results in the production of too little urine, a personal or family history of stones and a history of surgeries such as gastric bypass or bariatric surgery. Calcium supplements are also associated with a slight risk of kidney stones. However, consuming too little calcium from food can promote kidney stone development as well. (Most kidney stones are formed from calcium combined with oxalate or phosphate, but when calcium is consumed, it combines with oxalate and leaves the body through the stool. When oxalate doesn't have enough calcium to bind with, it builds up in the bloodstream and enters the urine, where it can cause stones.) So can what you eat make a difference? Absolutely. Here's the recommendation to prevent stones. 1. Consume sufficient amounts of calcium -- at least two servings a day 2. Drink at least 8 to 10 cups of fluid a day -- drink enough so your urine is light and clear. Citrus beverages like lemonade and orange juice, as well as citrus-based sodas, such as lemon-lime and orange-flavored sodas, may also help. 3. Cut back on salt. 4. Eat a healthy, well-balanced diet. A diet high in animal protein is associated with kidney stone formation. 5. Lose excess weight and get regular physical activity. 6. They all provide the same amount of fiber and vitamin C. However, the green varieties tend to be slightly lower (about 10 percent) in both calories and carbohydrates, while the red varieties tend to be higher (about 50 percent) in beta carotene -- presumably due to their color. With regard to the different types of phytochemicals present in these apples, it depends on how they are measured. McDonald's® Tri-State Restaurant Owners Launch Second Annual Nutrition Network Fund To Support Community Nutrition …

ISELIN, N.J., April 2, 2013 /PRNewswire/ --McDonald's New York Tri-State area restaurants today announced the return of the McDonald's New York Metro Nutrition Network, a community outreach initiative implemented last year to provide grants to local organizations that focus on nutrition programs. Through the program, New York Tri-State McDonald's restaurant owners are teaming up with Dasani to offer seed money to help local organizations bring nutrition information and guidance to the communities they serve. McDonald's will be offering $25,000 worth of grant funding, while Dasani will offer an additional $5,000.

In addition to providing seed funding to community organizations, McDonald's is collaborating with the American Diabetes Association to help consumers make informed decisions at McDonald's. McDonald's had a booth at the organization's Expo on March 9, 2013, to distribute literature and wholesome menu items.

"The McDonald's Tri-State Owner/Operators Association is thrilled to be launching the Nutrition Network program for the second year," said Anthony Scari, president of the McDonald's New York Tri-State Owner/Operators Association. "After seeing the response from organizations in need across the Tri-State last year, it's become increasingly apparent how important it is that we do our part to support organizations that align with our commitment to nutrition awareness."

The McDonald's "Commitments to Offer Improved Nutrition Choice" initiative strives to help customers make informed choices. The brand will continue to seek to provide customers with wholesome menu items including the new Egg White Delight McMuffin, which will be available at participating restaurants nationwide this Spring.

To further educate consumers on wholesome choices, McDonald's is teaming up with Registered Dietitian Sharon Richter for the second year in order to help spread the nutrition message and show customers how McDonald's can be incorporated into a balanced diet. Richter was present at the American Diabetes Expo on March 9, and will also participate in judging applications submitted by non-profits.

Tribute to National Nutrition Month

The American Academy of Nutrition and Dietetics designated March as National Nutrition Month. The 2013 theme, Eat Right, Your Way, Every Day, reminds us that we all are to daily focus on fueling our bodies with healthy nutritious food daily, regardless of culture and social influences.

For a practical example, the holidays of Easter and Passover are upon us. Both celebrations are traditional and have their staple food items we are all enjoy eating with family and friends. However, for some, coming around the meal table produces an anxiety to eating, especially in front of others. One reason may be because of the fear of eating too much of such a tasty meal. Another reason is the fear that one serving of this particular food item will cause them to cheat and destroy on their diet.

The solution to this dilemma rises from the scientific realization that there is no such thing as a bad food. The clue is simply the fact that the person has the authority to choose how much of a food item he would eat at a meal. Obviously if a person chooses to eat caramel cake, for example, he should need to make sure that he is reaching all of the other food groups that day and not over eating the cake to the demise of other food with higher nutritional value. He should eat the caramel in the proper portion. These food items would be found in the grains, vegetables, fruit, dairy, and meat groups.

In the same merit, there is also no such thing as a good food or a good food group as many in the media are proclaiming. Eating one eats all of his nutrients from a particular food group, for example the fruit group, he will actually become malnourished. If someone says, Coconuts are the best food on the planet to eat, for example, one would still need to focus on eating all of the other food groups and eat the coconut in moderate portion (1/2 cup). The same goes for food labeled as fat-free, sugar-free, dairy-free, taste-free ? This does not give us the green light to eat that food all day long worry-free. This too my friend is not healthy eating.

TIPS to Eat Right, Your Way, Every Day:

1) Remember there is no such thing as a good food or bad food Just eat your food in moderation. Visit http://www.eatright.org for ideas.

2) Decide if the food you are eating is being eaten because of the situation or because of an emotion

3) Remember you have choice! When you make your food choice, choose to eat it in the proper portion based on the nutrition information on the nutrition facts label or using tools like myfitnesspal.com.

4) Aim to eat food from the grains, dairy, fruit, vegetables, and meat/meatsubstitutes food groups every day.

So, whether your grandmother makes your favorite potato latkes or your favorite hometown sweet potato salad, choose to eat the food in the proper portion (about 15 grams of carbohydrate or a half-cup scoop) without guilt and anxiety that you will gain 5 pounds from one meal.

UE's Public Health program to offer new nutrition emphasis

EVANSVILLE, IN (UE) -

Students interested in studying public health at the University of Evansville now have the opportunity to specialize in nutrition.

The nutrition emphasis was approved last week by UE's curriculum committee and involves the creation of two new courses in the existing public health program: Public Health Nutrition and Food Science.

"With the ongoing cultural shift toward preventive care and wellness, the University of Evansville has seen a significant increase in the number of students interested in studying nutrition," said Payal Patel-Dovlatabadi, DrPH, assistant professor and director of the public health program. "Nutrition is a key part of public health, and the need for trained professionals in this field has never been greater. We're excited to be at the forefront of this effort and prepare students for careers that make a significant impact on individual and community needs."

A Bachelor of Science in public health with an emphasis in nutrition will prepare students for diverse employment opportunities with state and local health departments, health and school systems, government agencies, universities and research institutions, wellness centers, and consulting firms, to name a few. The program will also prepare students who wish to pursue advanced degrees in fields including physical therapy, public health, health services administration, dietetics, and health education.

Foods Nutrition Experts Can't Live Without

I find it funny when a patient becomes bored while trying to eat healthy. (By the way, that same patient never complained about eating a plain bagel and cream cheese each morning for years before we met.) For many, there seems to be a strong disconnect between eating healthy and loving what they are eating.

Sure, I love French fries and pizza, but if asked which foods I couldn't live without, they wouldn't be included. Which foods would make my short list? If I narrow down the many foods I love, which would be tough, I'd say: oatmeal, eggs, hummus, and a baked potato. For me, oatmeal is the perfect start to the day because it's high in fiber, so it fills me up. Eggs can be prepared in many different ways and are a great source of protein. Hummus is packed with flavor (but not fat), and goes so well with a variety of foods. And a baked potato is the perfect stand-alone meal; I love it topped with hummus and an egg, or as the perfect compliment to my entree.

I know I'm not alone in my love of food, so I decided to ask my registered dietitian/nutritionist (RDN) pals which foods they couldn't live without. Mind you, it was very hard for them to choose, too.

Consumer Reports puts restaurant nutrition claims to the test

Most big chain restaurants now put nutrition information calories, fat and sodium on their menus and websites. But just how accurate are these numbers? Does the meal youre served match the nutritional profile promised?

Consumer Reports decided to find out. For its May issue, the magazines secret shoppers went to a dozen well-known restaurants and fast-food chains, from Applebees to Wendys, and ordered 17 different items. They tested the same item from three restaurants in each chain.

The good news: In most cases, the published information was accurate.

We found that you can usually trust the figures you see, said editor Leslie Ware. On average, most of them were telling the truth.

Only two of the 17 dishes Consumer Reports analyzed in the lab had a fat or calorie count that was higher than promised at all three locations.

Olive Gardens Lasagna Primavera with Grilled Chicken was supposed to have 420 calories and 15 grams of fat. The samples the magazine tested had 508 to 585 calories and 25 to 32 grams of fat. Thats more than the 20 percent variance thats generally considered acceptable with nutrition information.

The company told TODAY it takes great care to provide accurate nutrition information. In an email, Olive Garden explained that an error had been made in the initial testing of the entree when it was introduced last October.

As soon as we caught this error, we retested the dish and updated the nutritional information on our website with the new data in late December, the email said. Unfortunately, though, the information was not updated everywhere and one page on our website still contained the old nutritional data. We have since corrected this, too.

Olive Garden told TODAY that Consumer Reports never contacted them to confirm the numbers and did not give them an opportunity to respond.
