The pancreas is a gland in the abdomen, located behind the stomach and in front of the spine, which is responsible for our bodys digestion and blood sugar regulation. Pancreatic cancer begins when abnormal cells within the pancreas grow out of control and form a tumor.

A major challenge with this condition is that it often goes undetected because symptoms rarely occur until advanced stages of the disease. And, with no standard diagnostic tool or established early detection method for pancreatic cancer, its difficult to diagnose early.

The good news is that if its caught early, pancreatic cancer is curable. When diagnosed in its more treatable stages, patients may be eligible for surgery, which offers the best chance for controlling the disease long-term. Unfortunately, pancreatic cancer is often found too late when surgery is no longer an option.

The key to early detection is being aware of risk factors and symptoms of pancreatic cancer. Since symptoms can be vague or not show until cancer cells have spread to other parts of the body, there typically arent any early signs.

Even once the cancer has grown, the most common symptoms can be subtle. These include: pain (usually abdomen or back), weight loss, yellowing of the skin/eyes (jaundice), loss of appetite, nausea, stool changes, pancreatitis, and recent-onset diabetes.

There are several established risk factors for pancreatic cancer, but the most important is cigarette smoking. Smokers are twice as likely to develop the disease. Other significant risk factors are obesity and environmental, including heavy exposure to certain chemicals such as petroleum compounds, solvents, dyes, and metal refining chemicals. Family history, diet, race, gender, age, diabetes, and pancreatitis can also determine ones risk.

Research studies have identified some genetic factors that may increase a persons risk for developing pancreatic cancer. This is especially significant if the individual has multiple family members who have had cancer at a young age.

Lifestyle changes and overall health approaches may reduce your risk including quitting smoking, drinking less, and maintaining a healthy weight.

Pancreatic cancer may cause only vague symptoms, but if you experience one or more of the above unexplained symptoms that are abnormal and persist, its time to see your physician. Remember, early detection saves lives.

Exercise affects many every day. According to Consumer Reports of the Washington Post, adults are recommended to get at least 150 minutes of moderate exercise or 75 minutes of vigorous exercise every week. They said that around half of adults achieve the recommended amount (April 29, 2019).

Exercise has many health benefits these adults could miss out on. Physical activity lowers the dangers of heart disease, some cancer and stroke, according to the Australian Department of Health. Besides these, it improves sleep, maintains a healthy weight and increases energy (April 4, 2019).

Darin Jordan said when he is tired and exercises, he feels happier, accomplished, and has more energy.

I have found that exercise can better my mood. Often, I do not feel like exercising, but when I do, I feel more confident and satisfied.

There is research to support that exercise increases good moods. Good moods are gained especially by exercising outside, where vitamin D is increased, said Harvard Health Publishing. Vitamin D fights against many diseases including cancer and heart problems (July 2010).

Exercising outside helps people to gain vitamin D, which then elevates mood, said Better Health Channel. They also said people are generally happier and more likely to be active if they are moving around outside (January 2018).

I believe physical activity contributes happiness and many health benefits to those who take a few hours out of their week to exercise. I continue to make exercise a priority in my life.

Marissa Muljat said that exercise puts her in a better mood. Theres the Christian aspect of it (healthy living). God tells us to treat our bodies as temples to him, Muljat said. I agree that through healthy living, we can honor God and respect the bodies he created.

Not only can exercise change our moods; it also fights against depression. Gretchen Reynolds of the New York Times said that exercising four days a week lowers depression. Reynolds also said that for mentally healthy people, exercise results in less anxiety and anger (April 8, 2020).

In a study done by Columbia University Medical Center, researchers directed half of their volunteer group to exercise four times a week and half to do nothing. Reynolds said that after three months when they were told to pause working out, The exercise group had learned to enjoy the exercise (April 8, 2020).

This is good news for us because it means that if we stick to working out, we may learn to like it. When I am regularly exercising, I enjoy it more and feel better about myself.

Another advantage to working out are the social benefits. Social interaction is essential to living a healthy, happy life, said Jane Brody (June 12, 2020).

Brody also said that relationships impact how people live, such as exercising friends encouraging their friends to exercise. It is important for us to choose friends who will encourage us to exercise and eat healthfully (June 12, 2017).

I have found this to be true in my life as well. I am more likely to exercise regularly if I have a partner to work out with. Another example is eating healthfully, because my family encourages me to do so and keeps me accountable.

Good options for socially exercising include going to the gym, walking with friends and getting a work-out partner.

Exercising with others increases the likelihood of people continuing to work out and will probably make exercise more fun. I enjoy exercising and hope to maintain it as a priority in my life.

If we were to describe 2020 in a word, "ideal" would not likely top the list. But connecting with nature and loved ones at a safe distance can indeed feel like a little slice of heaven.

In Hawaii, where the environment is conducive to healthy living and socially distanced outdoor adventures, paradise is still possible.

With the launch of the Safe Travels Hawaii program, the state reopened to travelers from the mainland U.S. (beginning October 15, 2020) and Japan (beginning November 6, 2020). To bypass the 14-day quarantine, visitors and returning residents are required to show proof of a negative Covid-19 test. The test must be administered through one of the program partners within 72 hours before departure of the final leg of the flight to Hawaii.

While you're in the Aloha State, you are expected to kokua (help) protect yourself as well as those who live here: wear a mask, don't gather in groups larger than five people, wash your hands frequently, maintain at least a six-foot distance from others, and abide by local mandates. When you're in Hawaii, you're never too far from a mountain trail, postcard-perfect beach, tropical forest, or palm tree skyline. Even in the cities, you'll find plenty of parks; the state's capital and largest city, Honolulu, ranked first (out of 100 large U.S. cities) for its percentage of green spaces.

Hawaii offers ample opportunities for socially distanced outdoor activities such as hiking and surfing, and research has shown that simply spending time in nature can also positively impact your mental and physical healthincreasing serotonin, lowering your heart rate, reducing anxiety, and boosting your mood and immune system.

Air quality affects lung health, and air pollution has been linked to higher Covid-19 death rates. In Hawaii, you can breathe easy; we have some of the cleanest air in the country. A day at the beach might benefit your mental health, too. In addition to the calming sound of the waves, some studies have shown that negative ions in the ocean air may improve your mood.

For an extra mood booster, add in possible sea turtle sightings at a quiet beach like Papailoa on O`ahu or a secluded gem like Polihua Beach on Lanai.

A Daily Dose of Vitamin D

A sunshiney day keeps the doctor away. Well, we're not doctors so we can't say that for sure. But what we do know is that vitamin D helps reduce inflammation and regulate immune function. And recent studies show that vitamin D deficiency may increase the severity of Covid-19.

The body produces vitamin D when exposed to sunlight. And if you're in Hawaii, you have a pretty solid chance of catching some rays. Honolulu receives about 270 days of sun per year; Lihue, Kauai gets around 240; and even Hilo, Big Island, one of the rainiest cities in the world, still receives about 170 days of sunshine each year.

High Standards

Hawaii's response to the pandemic was one of the most aggressive in the country, and while the state has recently reopened to tourism, we still have some of the strictest measures. Leisure travelers cannot enter Hawaii without either showing proof of a negative Covid-19 test or quarantining for 14 days on arrival. The state is still only in Tier 2 of the reopening plan, which limits restaurants, retail, and other businesses to 50 percent capacity and gatherings and tours to five people. A mask order is in effect and enforced by local businesses. It varies slightly by county, but in general, if you are stepping outside your home or hotel, you are expected to wear a mask. Businesses may deny service to anyone refusing to comply and, in some counties such as Maui, citations are issued. Lieutenant Governor Josh Green is pushing for a stricter, statewide mandate that would allow police officers to issue fines for non-compliance in the hope that stronger enforcement can keep locals and visitors safe.

The concept of malama (care for, protect) is deeply rooted in Hawaiian culture and, with it, the acknowledgment that all of us are connectedour actions impact others, for better or worse. In the same way that businesses here are doing everything they can to malama their customers and guests by improving sanitation procedures, reducing capacity, and enforcing mask policies, visitors also have a responsibility to malama Hawaii: show aloha to other travelers and locals and keep each other safe by following pandemic-related guidelines.

Clear the air in Birmingham’s Health District by decreasing secondhand smoke and increasing walkability – UAB News

The Birmingham Health District is an effort to create a healthier area by being smoke-free and walkable.

According to the Centers for Disease Control, there is a 25 to 30 percent increased risk of developing heart disease among nonsmokers exposed to secondhand smoke at home or work. In an effort to decrease secondhand smoke exposure and improve walkability, Birminghams Health District was launched one year ago. The Health District focuses on limiting the amount of smoking exposure and providing a health-focused environment for individuals to walk around the area without secondhand smoke exposure.

As we celebrate our first year of going smoke-free in the Health District, we look to the future of making Birmingham a healthier community by building upon healthy habits, said Mark Wilson, health officer of the Jefferson County Department of Public Health. Our community continues to see enhanced walkability, making it crucial to decrease peoples exposure to secondhand smoke.

The Health District is a smoke-free area spanning roughly from 12th Avenue South to Fourth Avenue South, and Eighth Street South to 22nd Street South. All sidewalks, streets, bus stops, parks and other outdoor public areas in the Health District were designated smoke-free as of Dec. 1, 2019, to promote health and wellness among residents and visitors to the area.

Much of the Health District area is walkable and a place where those in the area can enjoy being outside, said Rebecca Kennedy, Ph.D., assistant vice president for UAB Student Health and Wellbeing. Secondhand smoke impacts the walkability of an area and the health of those in the area. Together, we can make a difference in each others overall health and well-being by limiting the amount of secondhand smoke taken in.

As a commitment to promoting healthy living, several health-focused entities in the area have joined together to improve the air breathed in by employees, area residents and visitors. Health District partner organizations continue to makesmoking-cessation resourcesavailable.

Partners of the Health District to support its nonsmoking policies include Birmingham Veterans Affairs Medical Center, Childrens of Alabama, City of Birmingham, Cooper Green Mercy Health Services, Jefferson County Department of Health, Southern Research, UAB Medicine and the University of Alabama at Birmingham.

Secondhand smoke is defined by the National Cancer Institute as smoke that comes from the burning of a tobacco product and smoke that is exhaled by smokers. Inhaling secondhand smoke is dangerous as it contains carcinogens that can cause cancer, respiratory illness, cardiovascular disease and stroke and can lead to death. Carcinogens found in secondhand smoke include arsenic, lead, radioactive elements, formaldehyde and benzene.

The goal of this Health District is to encourage our patients, staff, visitors and community to live healthy lives free of tobacco products, said Susan Walley, M.D., professor in the UAB School of MedicineDepartment of Pediatrics. The Health District is part of the commitment that UAB and partner organizations made to protect nonsmokers from secondhand smoke and, importantly, provide support and resources for tobacco users to quit.

According to the United States Department of Health and Human Services, there is no safe level of first- or secondhand smoke, and more than 20 million Americans have died because of smoking, including 2.5 million nonsmokers from secondhand smoke. If smoking rates remain as they are, the Department of Health and Human Services predicts 5.6 million children age 18 and under today will die early from smoking.

Quitting smoking is one of the single best things that can be done for ones health and for the health of others. Alabamians have several resources to live a healthier, smoke-free life, including:

Since he started stock trading from his Harvard dorm back in 1987, Griffin has built up a personal fortune of more than $15 billion and made a reputation on Wall Street as a giant in the hedge world. While he is personally reclusive, his investment decisions remain public, and following Ken Griffins stock choices makes a viable investment strategy.Griffin notes the market fall last winter, and describes the general rebound since March as a macro traders dream. Looking at the election, he sees the results as a net positive for the markets. Divided government, he believes, along with a narrower Democrat majority, will empower the centrists and help avoid crippling tax increases. With this in mind, we wanted to take a closer look at three stocks Griffin's fund Citadel picked up recently. Running the tickers through TipRanks database, we learned that each one boasts a Strong Buy consensus rating from the analyst community and massive upside potential.Kadmon Holdings (KDMN)First up we have Kadmon, which focuses on developing drug treatments for immune disorders and fibrotic diseases, and like many clinical research companies, the investment point here is all about potential rather than earnings. The position is valued at more than $24 million.Indeed, thanks to the company's promising pipeline and $3.80 share price, Mizuho analyst Mara Goldstein believes investors should get in on the action. Belumosudil, a novel ROCK2 inhibitor, successfully completed a pivotal program (ROCKSTAR) in chronic graft versus host disease and a submission to the FDA has been initiated. We see this indication as generating U.S. revenue of $628 mln in 2030, which is not fully appreciated in KDMN's valuation, in our view [] We also see potential opportunity from additional indications and other candidates holding valuation inflection potential, Goldstein noted.To this end, Goldstein rates KDMN a Buy along with a $13 price target. (LRN)Next on our list of Griffin picks is K12, a company in the education management organization niche or in other words, a provider of school curricula and educational resources designed for online learnings as an alternative to traditional brick-and-mortar school systems. K12 was founded in 2000, but has come into its own during the corona crisis of 2020, when social lockdown policies shunted students toward homeschool and online venues.The numbers show it, as far as they can. K12 reported Q3 (FY Q1) revenue of $371 million, up 37% from the prior quarter and an even more impressive 44.3% year-over-year. The companys general education business accounted for $313.8 million of that total, and was up 34.4% year-over-year. EPS jumped 150% sequentially, from 12 cents in Q2 to 30 cents in Q3.Clearly, Griffin understood K12s potential in the current environment, as he purchased 447,703 shares of LRN during the third quarter. Griffin now owns over 496,000 shares of the company, and this holding is worth almost $11.9 million.Taking a bullish stance on this stock is analyst Alexander Paris, of Barrington. In the most recent quarter, Overstock beat the estimates on earnings and revenues. EPS was expected at a 22-cent loss, but came in at a profit of 50 cents. Obviously, Overstock has benefitted from the corona pandemic pushing more retail online, and OSTK shares have benefitted, too. The stock is up an astronomical 707% year-to-date, even after slipping significantly from its late-August peak value.A discount retailer with a strong online presence is a clear opportunity in the current climate, and Griffin took advantage of it. His new position is OSTK totals 110.281 shares, currently valued at $6.3 million. Writing for Piper Sandler, 5-star analyst Peter Keith notes, [T]rends in Q4 "remain strong", suggesting to us that continuing ~100% growth in the qtr is quite possible. New customer growth was +141% y/y, and OSTK saw sequential improvement in its new customer repeat purchase rate.The analyst concluded, "Valuation at <1.0x NTM EV/S looks very cheap to us, especially considering that a ~$490M net cash position, representing ~18% of market cap. We would be aggressive buyers of the stock at current levels."Keith gives OSTK an Overweight (i.e. Buy) rating, and his $140 price target implies a 145% upside for the next 12 months. 1. Caramel" Apple:We can easily prepare our own diabetes-friendly version of an old-time favorite the caramel apple by replacing the high carbohydrate caramel with almond butter. Slice an apple into wedges and spread crunchy almond butter on one side.

Nutrition benefit: Swapping out caramel for almond butter lowers the number of carbohydrates and increases the fiber in your snack. Studies have shown that almonds do not spike blood glucose levels and keep us feeling full and satisfied.

2. Flavored Popcorn:Place cup popcorn kernels in a medium bowl; cover bowl with a microwavable plate and microwave on high setting for 2 -3 minutes. November is National Family Caregivers Month. This year, caring for an elder during the Coronavirus pandemic creates additional considerations. When you're caring for others, it's critical that you take care of yourself to decrease the risk of increased mental exhaustion and physical health problems. Here are some tips to help you provide care and stay safe.

Whether you live with the person that you are providing care for or if you live separately; focusing on planning ahead, mental health and practicing infection prevention measures are essential for caregivers in the era of COVID-19.

Ordering a 90-day supply of medications, setting up home delivery of incontinence supplies, and refills for supplies of chronic disease care (lung disease or diabetes for example) alleviate last-minute refill requests.

Some caregivers meditate, pray or use relaxation techniques such as deep breathing or visualizing a positive place to improve mental health. Remembering to wash hands frequently, practice physical distancing, and mask wearing are prudent when going out or visiting.

Inquire with medical professional if they are doing telehealth visits and use them when appropriate. Keep key documents, such as medical histories, current medications, medical information release forms and advance directives, easily accessible for an emergency.

Explore community resources; these support and respite services can assist in the day to day caregiver responsibilities.

Senior Resources is our local Area Agency on Aging and can provide a wealth of knowledge.

Schedule a geriatric assessment; this is a helpful option in obtaining an accurate diagnosis and suggesting treatment/care options.

Care options can assist with some of the many responsibilities of caregiving; they include home health care, adult day services and home repair services.

Take a break from day-to-day tasks, as you deserve it. Your elder family member will benefit from someone else's company.

Think about respite care by friends, relatives or volunteers. A weekend or longer vacation can be helpful for the caregiver. Investigate a home health agency, nursing home, assisted living residence or residential care home; these care options usually accept short-term residents when they have a vacancy. Adult day centers, which usually operate five days a week, provide care in a group setting for older people who need supervision, socialization, medication and health monitoring.

Devise a plan for both of you to stay healthy that includes exercise, nutrition, hydration and adequate sleep. Focus on joy and gratitude; adopting a mindset that "this too shall pass" and "we are in this together.

In light of heightened awareness regarding senior health and the importance of healthy aging, along with the flu season upon us and the coronavirus pandemic continuing, it is an important time to consider the distinct benefits of an integrated health and wellness system that helps keep seniors safe and healthy: Erickson Health Medical Group (EHMG).

This year it is particularly important to get vaccinated for influenza because of COVID-19. The symptoms of COVID-19 are often very similar to flu symptoms. Body aches, fever, chills, cough are common to both illnesses, so differentiating between the two will be challenging. We typically immunize well over 90% of the residents against flu as compared to the national average of about 65%, and we offer flu shots free of charge to staff as an additional preventive measure. To facilitate our vaccination efforts this year, our teams have been going door-to-door to offer residents flu shots in the comfort of their apartment homes. Think the holidays are here to ruin your health? Think again.

Its holiday season, and that means you will soon be thinking and talking about New Years resolutions. We already have Christmas decorations in the stores, and soon will come the bombardment of holiday themed marketing.

Advertisements for holiday parties, holiday cooking and holiday snacks. With advertisements in your face in stores, as well as every device you own, its impossible to not feel overwhelmed. Then as Christmas time approaches everyone will be thinking about resolutions. You will hear things like New Year New You, This year will be the year I lose the weight, Starting in January Im finally going to get in shape.

People think they must wait to the beginning of the new year to start living a healthy life. We have been conditioned to thinking that we consume all this horrible food during the holidays. This gives us the excuse to let yourself go because Dont worry, Ill really get after it in January. But evidence and the reality are you are just digging yourself a hole, so lets look at two scenarios.

According to U.S. News & World Report, the failure rate for New Year's resolutions is said to be about 80%, and most give up by mid-February. The average American gains five pounds of weight during the holidays, so if this is true, then why would you put yourself through the hassle of gaining weight only with the resolution to lose it come January? Thats like running a race but making yourself start 50 feet behind the other competitors. This makes no sense, and it is a yearly battle I must fight with clients working in the health and wellness industry. So here are the hard facts:

As of Nov. 19, there are 42 days until January. Assuming you eat three meals a day that means you will consume 126 meals between now and the New Year. Lets look at the remaining holidays. Thanksgiving and the day after (two meals), Christmas and New Years (one meal each), and lets say three parties (three meals) for a total of seven days and 10 meals.

So, what seems to be a big roadblock in your healthy lifestyle, is actually seven days out of 56, and 10 meals out of 126. Logically no one would sacrifice five unwanted pounds on those odds, yet every year millions of people do. A healthy lifestyle is a year-round affair, and a lifelong pursuit. A healthy lifestyle also means balance. Its ok to enjoy those moments guilt free because if you are doing what you should be doing which is eating sensibly and exercising daily, then you dont have to worry about digging a hole for yourself. Change your mind set about what the holidays truly are, and you will be able to enjoy the treats and keep a slim waistline.

Nonprofits Receive $900,000 in Funding from Tufts Health Plan Foundation to Address COVID-19 Pandemic – PRNewswire

WATERTOWN, Mass., Nov. 19, 2020 /PRNewswire/ -- Tufts Health Plan Foundation today announced 64 community organizations will share$900,000 in funding to help in on-going COVID-19 response efforts. The nonprofit organizations focus on urgent needs in communities, especially those disproportionately affected by the virus. The funding, first announced in June, is in addition to the $1 million in COVID-19-related grants awarded earlier this year.

"Nonprofit organizations continue to face significant challenges as they respond to current needs, prepare for colder weather and address changing conditions," said Tom Croswell, president and CEO of Tufts Health Plan. It’s time to end the stigma associated with veganism – The Diamondback

In high school, I took an environmental studies class that traumatized me to the point of becoming vegan. This took a lot of character development, as I constantly had to defend my veganism to my parents, friends and anyone who noticed I wasnt eating animal products. I was extremely conscious of the fact that I did not want to be an overbearing vegan you know, that person in your life who shames every decision you make and can calculate the exact amount of carbon dioxide you release into the atmosphere every time you breathe.

I was adamant about not being that vegan, so I kept my head down, ate my veggies and cried myself to sleep every night. My flirtation with veganism did not last very long. After a year, I was exhausted from constantly trying not to be annoying about my habits. All I wanted to do was reduce my environmental impact, but society bullied me out of it.

At this point in my life Im not a vegan, but Im still extremely conscious of my impact on the planet. I do not buy red meat and have quotas on chicken and seafood. I try to reuse and recycle and I never ask for plastic bags. If someone offers me a juicy burger, however, I dont turn it down.

When I meet a vegan, I thank them for their choice because they are reducing some burden on both the planet and me. Thanks to the millions of vegans living in the U.S., I can get by with being a reducetarian. This isnt to say that because vegans exist, everyone else can go around consuming copious amounts of meat. But because they exist, greenhouse gas emissions are reduced.

Defensive meat-eaters must stop shaming vegans who are trying to help the planet. I understand where the defensiveness is coming from. Vegans are depicted as soulless creatures who harass anyone who looks at a piece of meat with heart eyes. Setting boundaries between yourself and anyone who tries to bully you is important, but returning the same treatment to any vegan who crosses your path is counterproductive.

We need more vegan voices because they may have a deeper understanding of environmental and ethical issues, such as the criminal inhumanity of industrial farming, the cognitive complexity of other animals and the environmental impact of eating meat. They arent coming at you with baseless claims for the purpose of making you feel bad about your food choices. Many vegans are coming from a place of in-depth research and concern for the environment.

Climate scientists have been saying for years now that if we want any chance at saving our planet, we will have to significantly reduce the amount of meat we consume. Research shows that in Western countries, beef consumption would need to fall by 90 percent to avoid dangerous levels of climate change.

If we want to save our planet, we all need to do our part in becoming a bit more vegan. Our planet deserves vegans, and we owe it to the planet to support anyone who is trying to live a more sustainable lifestyle. Yes, judgy vegans are annoying, but the annoyance is nowhere in comparison to the harm that meat-eaters cause to the environment. The least we can do is respect and appreciate vegans because they are doing the difficult work that most of us are too afraid to do.

Ed Harris Wants to Help You Eat More ‘Veganish’ With New Cookbook – The Beet

Chef Ed Harrisof Food Network'sChopped and Iron Chef Internationalfame is bringing anew approach to his creations, dosing his dishes with a heftyhelping of plantsin his new cookbook Veganish. Harris, who studied culinary at the Art Institute of New York City and built his resum at iconic restaurants including Jean-Georges and Rivers' Caf, found his passion for cookingthrough his time in the kitchenmaking food for his family as a young boy in St. Lucia.

In many ways, Harris' new cookbook ventureactually represents a return to his roots, as Caribbean cuisine is deeplyentrenched in plant-based traditions. I chatted with Harris to learn about his plant-based journey, and what pushed him to explore the world of veganism. Read on for tips, inspiration, and a delicious plant-based recipe from the chef himself.

Chef Ed Harris: Yes, everything in the cookbook is vegan. I see 'Veganish' as a friendlier term because the concept of Veganism can be intimidating to some.

EH: I love the mushroom stir fry, the parsley rice,charred cauliflower stir fry, and potstickersas some of my favorites, and also basics like the aromatics and the tomato sauce which is a hybrid of Italian and Nigerian flavors. My wife is Nigerian, and I was inspired by the way that they make tomato sauce and married that with the traditional technique. It creates a really robust tomato sauce that you can add to anything for flavor.

EH: One thing I pride myself on doing a lot is trying to make recipes easy to follow. You don't need to be a pro any home cook can do this. A beginner, a foodie, it really doesn't matter. Some recipes take a lot of skill but are broken down in a way that's easy enough for a new cook to follow. There's one particular recipe the aromatics: The onion, garlic, ginger, and chilis is something I believe in so adamantly because you don't realize how much flavor you can develop just by having thiscombination as something you add to fried rice or stews or beans. Even for breakfast, making hash browns and adding a spoon of this will literally take your recipe from 1-10 in an instant.Not to mention, all of the immune-boosting benefits from garlic, ginger, onions, and chili peppers.

EH: I am working on cutting out some animal products still. Being that I am a chef, when I travel, especially internationally, there are dishes that I want to try just so that I can get a feel for the flavor,. I feel that if I can try it, I can understand it a little bit better, and then really make something plant-based that can replicate that item.

EH: There was definitely a point: My whole family, my wife, and our three kids, we sat down and watched What The Health on Netflix and that to me was really eye-opening. I knew most of what they were saying but to actually see it and hear it, that just made it even more clear for me.

EH: The way that factory chickens were being bred. From inception to a full adult,the whole process is so unnatural and unhealthy. What really got me was that the chickens were getting big so quickly that their legs couldn't even support their own bodies. For them to be sitting down all day and not getting any exercise, which is what makes chicken legs really delicious in the first place, because of the workout that they got, it threw me for a loop.

EH: Growing up in the Caribbean, we do eat tons of vegetables and fruits, that's just part of our diet. I just love eating meat as well. As I got older, I realized that it wasn't really great for me, so I leaned in towards cooking a lot more vegetables, cut down on eating meat only twice, three times a week. I really focused more on plants, fruits, vegetables for lunch, and dinner until it because every day.

EH: YesMushrooms, all kinds. You can do so much, pickling, grilling. When you take time to understand different varieties you can use certain ones to mimic the mouthfeel of meat so you don't miss it. When I can't find good mushrooms, I love using beans,tofu, all kinds of plant-based proteins.

EH: My new line of spice blends, called World Traveler, is my pride and joy. There are five of them, Bollywood, Chinatown, Taco Tuesday, Caribbean Heat. The names are kind of self-explanatory- Bollywood I use for curries, Chinatown for dumpling fillings. They're all-natural, non-GMO.

EH: Veganish focuses onSoutheast Asian cuisine Indian, Southeast Asian, Chinese, Thai flavors. Those are my favorite to cook, and those are cultures that are very easily made vegan.

Recipe backstory: Chef Ed originally learned the technique while working at Buddakan in NYC. The oven-dried pineapple technique adds a dimension of flavor and natural sweetness. It is also beautiful to look at and eat.
